Sometimes you just need to watch your child have a conversation with a slug to forget your worries and remember to find joy, even when it’s slimy.Never a dull moment with @phil_torres and his eye for spotting nature EVERYWHERE 😂 Also very fitting with Fjora’s middle name being Birdie to find a 🐣 nest outside of her pediatrician’s window 🥰Four weeks postpartum, and the creative spark is returning—especially in the kitchen. Lately, I’ve been weaving fennel into everything from breads to cakes to muffins. Atlis, my three-year-old, is obsessed with the flavor, and its subtle sweetness brings warmth and depth when baking—especially in these cornbread muffins.

Fennel and fenugreek aren’t just tasty—they’re deeply nourishing allies for postpartum bodies like mine, especially when it comes to supporting milk supply. Meals and snacks that are grounding, healing, and comforting are exactly what my body needs right now, and these muffins are wholesome perfection in a bite.

Love using my @mockmillusa for the freshest of flours, and thanks to @californiaoliveranch for the olive oil inspiration for this recipe. I’m using their mild organic which is perfect for baking.

Cornbread muffins with fennel + fenugreek Recipe: 
Makes 12 muffins

Ingredients
	•	1 cup yellow cornmeal
	•	1 cup all-purpose flour (or sub ½ cup oat flour for lactation boost)
	•	1 tbsp baking powder
	•	1/2 tsp baking soda
	•	1/2 tsp salt
	•	1/4 cup maple syrup or honey 
	•	2 large eggs
	•	1/2 cup whole milk Greek yogurt
	•	1 cup buttermilk 
	•	1/3 cup olive oil
	•	1–1.5 tsp ground fenugreek (start with 1 tsp for a gentle flavor)
 - 1bsp fennel seeds (cracked a bit with mortar and pestle) 
	•	Optional add-ins:
1 tsp vanilla extract 
	•	2 tbsp ground flaxseed or brewer’s yeast (for lactation)
	•	1/2 cup chopped dates or for natural sweetness

Instructions
	1.	Preheat oven to 375°F (190°C). Line or grease a muffin tin.
	2.	In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, fenugreek, and flaxseed (if using).
	3.	In another bowl, whisk the eggs, Greek yogurt, milk, olive oil, and maple syrup until smooth.
	4.	Gently stir the wet ingredients into the dry until just combined. Fold in any optional add-ins.
	5.	Divide into muffin cups and bake for 15–18 minutes, or until golden and set.
	6.	Let cool for 5 minutes in the pan, then transfer to a wire rack. Serve warm and top with a little ghee or honey butter ❤️I walked by this little window and knew I had to get my family in there! I have always fantasized about dressing up as a family in historic costumes like these and our daughter’s favorite thing in the world is to wear fancy dresses, she was so happy we adults got to play pretend with her in this way. @zagrebvintagephoto I can’t wait to print and frame these at home!

Years ago when I was living in London as a model, I lived in the attic of their proper English brownstone, and I still remember them talking about their dream of one day having a manor and farm of their own! Fast forward to now… and wow. They did it and turned that dream into something so special. 

Silchester feels like the kind of place you go to exhale. Friendly farm animals to greet you in the morning (2 week old lambs for us!), beautiful farm stays, bikes to ride around the property, incredible food, cozy brunches, Sunday roasts, holiday activities for families… definitely a spot that makes you want to stay longer than you planned.  Also if you are wedding venue hunting in England… look no further 😘

And the food… SO good. Phil had his first-ever Scotch egg here and I genuinely think it ruined all future Scotch eggs for him 😂. The sausage roll made right on the farm was honestly one of the best I’ve ever had too. Everything feels thoughtful, seasonal, and really connected to the land. 

If you’re planning a trip, definitely check their Instagram or website to see when the restaurant is open because they host different seasonal events, dinners, brunches, and stays throughout the year. Loved staying on Tumon Bay with the MOST tranquil, kid friendly, beautiful waters ever, and access to so much authentic food.My favorite place is wherever my people are ❤️ which lately has been together all over the globe. We are in the Cotswolds for a few days and wow has it been a treat exploring this part of England, the countryside shops and bakeries are some of the best we have been to in the UK.
