Sometimes you just need to watch your child have a conversation with a slug to forget your worries and remember to find joy, even when it’s slimy.Never a dull moment with @phil_torres and his eye for spotting nature EVERYWHERE 😂 Also very fitting with Fjora’s middle name being Birdie to find a 🐣 nest outside of her pediatrician’s window 🥰Four weeks postpartum, and the creative spark is returning—especially in the kitchen. Lately, I’ve been weaving fennel into everything from breads to cakes to muffins. Atlis, my three-year-old, is obsessed with the flavor, and its subtle sweetness brings warmth and depth when baking—especially in these cornbread muffins.

Fennel and fenugreek aren’t just tasty—they’re deeply nourishing allies for postpartum bodies like mine, especially when it comes to supporting milk supply. Meals and snacks that are grounding, healing, and comforting are exactly what my body needs right now, and these muffins are wholesome perfection in a bite.

Love using my @mockmillusa for the freshest of flours, and thanks to @californiaoliveranch for the olive oil inspiration for this recipe. I’m using their mild organic which is perfect for baking.

Cornbread muffins with fennel + fenugreek Recipe: 
Makes 12 muffins

Ingredients
	•	1 cup yellow cornmeal
	•	1 cup all-purpose flour (or sub ½ cup oat flour for lactation boost)
	•	1 tbsp baking powder
	•	1/2 tsp baking soda
	•	1/2 tsp salt
	•	1/4 cup maple syrup or honey 
	•	2 large eggs
	•	1/2 cup whole milk Greek yogurt
	•	1 cup buttermilk 
	•	1/3 cup olive oil
	•	1–1.5 tsp ground fenugreek (start with 1 tsp for a gentle flavor)
 - 1bsp fennel seeds (cracked a bit with mortar and pestle) 
	•	Optional add-ins:
1 tsp vanilla extract 
	•	2 tbsp ground flaxseed or brewer’s yeast (for lactation)
	•	1/2 cup chopped dates or for natural sweetness

Instructions
	1.	Preheat oven to 375°F (190°C). Line or grease a muffin tin.
	2.	In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, fenugreek, and flaxseed (if using).
	3.	In another bowl, whisk the eggs, Greek yogurt, milk, olive oil, and maple syrup until smooth.
	4.	Gently stir the wet ingredients into the dry until just combined. Fold in any optional add-ins.
	5.	Divide into muffin cups and bake for 15–18 minutes, or until golden and set.
	6.	Let cool for 5 minutes in the pan, then transfer to a wire rack. Serve warm and top with a little ghee or honey butter ❤️How many places serve eggs Benedict?

It’s close to my heart — passed down through generations, with a little tweaking along the way. Watching my mormor and mom make these growing up, there were never measuring cups… just intuition and a lot of love. I think that’s why it’s taken me so long to share, I’ve always made them the same way (by which I mean every time is a little different). 
If you take anything from this, let it be that these waffles are forgiving. The first one is always our “tester,” and from there we decide if the batter needs anything (for example sometimes add more buttermilk or more cardamom), or if it’s simply the designated taste-testing waffle 🙂
Starting the year with food shaped like love feels right. Thank you for asking for this one again and again ❤️
